Ingredients

Scale

Base Ingredients

  • 4 flour tortillas (soft and pliable)
  • 4 large eggs
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup cooked breakfast meat (bacon, sausage, or ham), chopped
  • 1/2 cup vegetables (bell peppers, spinach, or mushrooms), chopped
  • Salt, to taste
  • Black pepper, to taste
  • Optional herbs or spices (paprika, parsley, or chives)

Instructions

  1. Prepare the filling: Cook the chosen breakfast meats and vegetables until done. In a bowl, beat the eggs with salt, pepper, and optional herbs until fluffy. Set all cooked ingredients aside to cool slightly for easy rolling.
  2. Assemble the roll-ups: Lay each tortilla flat and evenly distribute the beaten eggs, shredded cheese, cooked meat, and vegetables on them. Avoid overfilling to prevent spillage.
  3. Roll and secure: Tightly roll each tortilla from one edge to the other. Use toothpicks if needed to keep the roll-ups intact during cooking.
  4. Air fry to perfection: Preheat your air fryer to 375°F (190°C). Place the roll-ups in the air fryer basket with space between each to ensure even cooking. Cook for 8-10 minutes, turning halfway through, until golden brown and crispy.
  5. Serve and enjoy: Remove any toothpicks and allow the roll-ups to cool slightly before serving. Enjoy the crispy exterior with the warm, flavorful filling inside.

Notes

  • Do not overfill the tortillas to avoid messy roll-ups and leaks during air frying.
  • Preheat the air fryer for the best crispy texture and even cooking.
  • Use thin tortillas for easier rolling and crispier results.
  • Rotate roll-ups halfway through cooking to ensure golden brown sides.
  • Serve with dipping sauces such as salsa, sour cream, or guacamole for added flavor.
