Ingredients

Scale

Main Ingredients

  • 1 cup full-fat Greek yogurt
  • 1 medium cucumber (peeled, grated, and drained)
  • 23 garlic cloves, minced or crushed
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Cucumber: Peel the cucumber, then grate it finely. Place the grated cucumber in a clean kitchen towel or cheesecloth and squeeze firmly to remove excess water. This prevents the sauce from becoming watery and keeps a creamy texture.
  2. Mince the Garlic: Finely mince or crush fresh garlic cloves using a knife or garlic press to add a vibrant punch of flavor essential to authentic tzatziki.
  3. Mix the Base: In a mixing bowl, combine the Greek yogurt with the strained cucumber, minced garlic, chopped fresh dill, and a generous drizzle of extra virgin olive oil. Stir gently until smooth and well incorporated.
  4. Add the Finishing Touches: Season the sauce with freshly squeezed lemon juice, salt, and pepper to taste. Lemon juice brightens the flavors, while salt and pepper enhance the overall taste.
  5. Chill and Serve: Cover the bowl and refrigerate the tzatziki sauce for at least one hour to allow the flavors to meld. Serve chilled as a dip, sauce, or side.

Notes

  • Drain the cucumber thoroughly to avoid a runny sauce and maintain creamy texture.
  • Use full-fat Greek yogurt for the best richness and authentic creaminess.
  • Fresh dill is preferred over dried for optimal flavor; dried dill can be used sparingly as it’s more concentrated.
  • Refrigerate the sauce for at least an hour to deepen flavors before serving.
  • Adjust garlic quantity to taste; roasting garlic softens its pungency if desired.
