  • 12 chipotle peppers in adobo, minced
  • 1/2 teaspoon garlic powder
  • 2 tablespoons fresh herbs (such as cilantro and parsley), chopped

Instructions

  1. Prepare the Avocado Filling: In a bowl, mash the ripe avocados until smooth. Stir in shredded Monterey Jack cheese, chopped cilantro, and lime juice. Season lightly with salt and pepper to enhance the flavors.
  2. Assemble the Egg Rolls: Lay an egg roll wrapper flat on a clean surface. Place a spoonful of the avocado mixture near one corner. Carefully roll the wrapper, folding and sealing the edges tightly using a bit of water or egg wash to prevent bursting during frying.
  3. Make the Chipotle Ranch Dip: Combine mayonnaise, sour cream, minced chipotle peppers, garlic powder, and fresh chopped herbs in a small bowl. Stir well until smooth and creamy.
  4. Fry the Egg Rolls: Heat oil in a deep pan or fryer to 350°F (175°C). Fry the egg rolls in batches for 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels to keep them light and crunchy.
