Instructions

  1. Prepare the Ingredients: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly. In a large bowl, mash the ripe bananas until smooth. Gather all your measured ingredients to keep the process smooth.
  2. Mix Wet Ingredients: Into the mashed bananas, stir in the Greek yogurt, brown sugar, eggs, vegetable oil or melted butter, and vanilla extract. Mix until well combined but avoid overmixing to keep the muffins tender.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. This ensures even distribution of leavening agents for a consistent rise.
