BBQ Chicken Grilled Cheese

The BBQ Chicken Grilled Cheese combines tender BBQ chicken with melted cheese and perfectly toasted bread, delivering a comforting sandwich with smoky, tangy flavors and a gooey texture. Quick to prepare and adaptable for any occasion, it’s a satisfying meal ideal for lunch, dinner, or game day snacks.

Ingredients

Main Ingredients

  • Cooked chicken, shredded or chopped – about 1 to 1.5 cups
  • BBQ sauce – 1/4 to 1/3 cup (choose your favorite smoky or sweet style)
  • Cheese (sharp cheddar, mozzarella, Monterey Jack, or blend) – 1 to 1.5 cups shredded
  • Bread (thick slices such as sourdough or Texas toast) – 4 slices
  • Butter – 2 to 3 tablespoons for grilling

Optional Add-Ins

  • Thinly sliced red onions – 2 tablespoons
  • Pickles, sliced – 2 to 3 tablespoons
  • Jalapeños, thinly sliced – 1 tablespoon

Instructions

  1. Prepare the chicken filling: In a bowl, mix shredded cooked chicken with your preferred BBQ sauce until evenly coated. This flavorful mixture forms the hearty filling that delivers that signature smoky and tangy taste.
  2. Assemble the sandwich: Lay out slices of bread and add a generous layer of BBQ chicken on one slice. Top with plenty of your chosen cheese, and add any optional add-ins if using. Then cover with the second slice of bread. Press gently together to ensure even layers.
  3. Butter the bread: Spread a thin layer of butter on the outside of both slices of bread. This will help the sandwich grill to golden, crispy perfection while keeping the inside soft.
  4. Cook the sandwich: Heat a skillet over medium heat and place the sandwich in the pan. Grill for 3 to 4 minutes on each side until the bread is toasted to a deep golden brown and the cheese is melted throughout. Cover the pan briefly if the cheese needs help melting.
  5. Serve and enjoy: Remove the sandwich from the pan and let it rest for a minute before slicing to keep all the cheesy, smoky goodness packed inside. Optionally garnish with fresh herbs or serve with pickles and your favorite sides.

Notes

  • Use really good BBQ sauce as it shapes the sandwich’s flavor.
  • Don’t overload the chicken filling to avoid soggy bread and uneven grilling.
  • Grill on medium heat for perfect crunch without burning the bread.
  • If cheese isn’t melting fast enough, cover the pan briefly to trap heat.
  • Let the sandwich rest after grilling for easier slicing and eating.
