Biscuits and Sausage Gravy Breakfast Pizza

A comforting and creative breakfast pizza that combines flaky refrigerated biscuits as the crust, topped with creamy, spiced sausage gravy, melted cheese blend, and fresh herbs. This easy-to-make dish takes the classic Southern biscuits and sausage gravy to a fun, shareable pizza format perfect for brunch or any special breakfast occasion.

Ingredients

Scale

Biscuit Base

  • Refrigerated biscuits (store-bought, enough to form a solid crust layer)

Sausage Gravy

  • 1 pound ground breakfast sausage
  • 3 tablespoons all-purpose flour (or gluten-free flour for gluten-free version)
  • 2 1/2 cups whole milk (room temperature)
  • Salt to taste
  • Black pepper to taste (lots for seasoning)

Toppings

  • 1 1/2 cups shredded cheese blend (cheddar and mozzarella mix)
  • Fresh parsley or chives, chopped (for garnish)

Instructions

  1. Prepare the sausage gravy: Brown the ground breakfast sausage in a skillet over medium heat, breaking it into crumbles as it cooks. Once fully cooked and browned, sprinkle the flour over the sausage and stir to create a roux base. Slowly whisk in the room temperature milk, stirring constantly until the gravy thickens to a creamy consistency. Season with salt and lots of black pepper to taste, then remove from heat.
  2. Arrange the biscuit base: Open the refrigerated biscuits and press them together firmly on a baking sheet or pizza stone to create a solid crust layer. The biscuits will rise and bake into a soft, flaky pizza base that holds all your toppings.
  3. Assemble the pizza: Pour the warm sausage gravy evenly over the biscuit crust, spreading it gently. Then sprinkle the shredded cheese blend generously over the gravy, ensuring a gooey, melty topping.
  4. Bake to perfection: Place the pizza in a preheated oven at 375°F (190°C) and bake for 15-20 minutes, or until the biscuits are golden brown and the cheese is bubbly and slightly browned on top.
  5. Garnish and serve: Once out of the oven, let the pizza cool for a few minutes before sprinkling freshly chopped parsley or chives on top. Slice and enjoy warm for the best comforting flavor.

Notes

  • Use room temperature milk to help the gravy thicken smoothly without lumps.
  • Don’t overcrowd the pan when browning sausage; cook in batches if needed for a crisp texture.
  • Press biscuits firmly together to prevent gaps during baking.
  • Experiment with mixing different cheeses for added depth and creaminess.
  • Watch baking time carefully; ovens vary, so check for golden biscuit edges and bubbling cheese.
