Ingredients

Scale

Dry Ingredients

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup unsweetened cocoa powder

Wet Ingredients

  • 1 cup (2 sticks) butter, softened
  • 1 cup sugar
  • 1 large egg
  • 2 teaspoons vanilla extract

Instructions

  1. Prepare the Dough: Start by creaming the butter and sugar together until light and fluffy. Then add the egg and vanilla extract, blending well. In a separate bowl, whisk the flour, baking powder, and salt. Gradually mix the dry ingredients into the wet until just combined.
  2. Divide and Flavor: Split the dough evenly into two bowls. To one half, sift in the cocoa powder and mix until fully incorporated, creating your chocolate dough. Leave the other half as the classic vanilla dough.
  3. Shape the Cookies: Roll out both doughs into equal-sized rectangles. Carefully layer the vanilla and chocolate dough sheets together, then roll the combined dough into a tight log. Chill for at least an hour to firm up the dough and make slicing easier.
  4. Slice and Bake: Preheat the oven to 350°F (175°C). Slice the chilled dough log into ¼-inch thick rounds and place on a parchment-lined baking sheet. Bake for 10–12 minutes or until the edges start to turn golden. Allow the cookies to cool on the pan before transferring them to a wire rack.
  5. Optional Finishing Touches: Once cooled, you can drizzle with white or dark chocolate or sprinkle with a light dusting of powdered sugar for that extra festive look.

Notes

  • Chilling is key: Don’t skip the chilling step—it helps prevent spreading and keeps your cookies perfectly shaped.
  • Use quality cocoa: A high-quality cocoa powder makes a noticeable difference in flavor.
  • Slice evenly: Use a sharp knife to slice the dough to ensure uniform cookie thickness.
  • Grease or parchment: Always line your baking sheets with parchment paper or a silicone mat to avoid sticking.
  • Storage tip: Keep cookies in an airtight container at room temperature to maintain freshness and texture.
