For the Patties
- 1 lb ground beef (80/20)
- 1/2 cup finely chopped onion
- 1 large egg
- 1/4 cup milk
- 1 tbsp Worcestershire sauce
- Salt and pepper, to taste
For the Mushroom Gravy
- 2 cups fresh cremini or button mushrooms, sliced
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 tbsp oil (vegetable or olive oil)
- 2 tbsp all-purpose flour
- 2 cups beef broth
- Salt and pepper, to taste
- Prepare the Beef Patties: In a large bowl, combine ground beef, finely chopped onion, egg, milk, Worcestershire sauce, salt, and pepper. Mix gently until just combined to avoid dense patties. Shape the mixture into four evenly sized oval patties and set aside.
- Sear the Patties: Heat a skillet over medium-high heat with a bit of oil and butter. Cook the patties for about 4 minutes per side until browned and cooked through. Remove and keep warm on a plate.
- Sauté the Mushrooms: In the same skillet, add more butter if needed and sauté sliced mushrooms with garlic and a pinch of salt until soft and browned, about 5 to 7 minutes.
- Make the Mushroom Gravy: Sprinkle flour over the mushrooms, stirring constantly for 1 to 2 minutes to cook off the raw flavor. Slowly whisk in beef broth, scraping the skillet’s bottom to loosen any browned bits. Simmer until the gravy thickens, about 3 to 5 minutes.
- Combine and Serve: Return the cooked patties to the skillet, spoon gravy over them, and simmer for another 2 minutes to meld flavors. Serve hot with your favorite sides.
Notes
- Don’t overmix the beef mixture to keep patties tender.
- Use a heavy skillet such as cast iron for even searing and flavor.
- Let patties rest after cooking to keep juices locked in.
- Use fresh mushrooms, not canned, for best flavor and texture.
- Deglaze the pan with broth or wine to build depth in the gravy.
- Adjust the thickness of the gravy by adding more broth or cooking longer as needed.
