  • 2 cups whole milk

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the elbow macaroni according to package instructions until just al dente. Drain thoroughly, reserving about 1/4 cup of pasta water for adjusting sauce consistency if needed.
  2. Make the Roux: In a large saucepan, melt the butter over medium heat. Stir in the flour continuously to form a smooth paste and cook for 1-2 minutes to remove the raw flour taste.
  3. Prepare the Cheese Sauce: Slowly whisk in the whole milk to the roux, stirring constantly to prevent lumps. When the sauce thickens and gently bubbles, reduce heat to low, then add Boursin cheese in small chunks along with the shredded sharp cheddar. Stir until fully melted and the sauce is creamy and smooth.
  4. Combine Pasta and Sauce: Add the drained macaroni to the cheese sauce, stirring to coat all noodles evenly. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached. Season with salt, pepper, and optional garlic powder to taste.
  5. Serve or Bake: Enjoy immediately for a creamy mac and cheese, or transfer to a baking dish. Top with extra cheddar or breadcrumbs and bake at 350°F (175°C) until golden and bubbly for a crispy finish.
