Instructions

  1. Prepare the Chicken Breasts: Trim the chicken breasts and carefully slice horizontally through the thickest part without cutting all the way through, creating a pocket for stuffing.
  2. Make the Boursin Filling: In a bowl, combine Boursin cheese with your choice of fresh herbs, cooked spinach, or other optional add-ins. Mix thoroughly until smooth.
  3. Stuff the Chicken: Spoon the cheese mixture generously into each chicken pocket. Secure each chicken breast with toothpicks to keep the filling inside during cooking.
  4. Season and Sear: Season the stuffed chicken breasts with salt, pepper, and garlic powder. Heat olive oil or butter in a skillet over medium-high heat and sear the chicken breasts on each side until golden brown.
  5. Bake Until Done: Transfer the seared chicken breasts to a preheated oven at 375°F (190°C). Bake for 15-20 minutes until the internal temperature reaches 165°F (74°C) and the filling is hot and melty.
