Ingredients

Scale

Peanut Butter Mixture

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar

Chocolate Coating

  • 2 cups semi-sweet chocolate chips
  • 1 tablespoon vegetable oil or shortening

Instructions

  1. Prepare the Peanut Butter Mixture: In a large bowl, combine the creamy peanut butter, softened unsalted butter, and vanilla extract. Gradually add the powdered sugar while mixing thoroughly until a thick dough forms that holds its shape but remains smooth and pliable.
  2. Shape the Buckeyes: Using your hands or a small cookie scoop, form the peanut butter mixture into 1-inch balls. Place them on a baking sheet lined with parchment paper. Chill in the refrigerator for at least 30 minutes to firm up before dipping.
  3. Melt the Chocolate: In a microwave-safe bowl or using a double boiler, melt the chocolate chips together with a small amount of vegetable oil or shortening. Stir frequently until the chocolate is glossy, smooth, and fully melted.
  4. Dip and Decorate: Using a toothpick or fork, dip each peanut butter ball into the melted chocolate, leaving a small circle of peanut butter visible on top to mimic the buckeye nut’s look. Place them back on the parchment-lined tray to set.
  5. Refrigerate to Set: Allow the dipped Buckeyes to chill in the refrigerator until the chocolate hardens completely, usually about one hour. Once firm, they’re ready to enjoy or package for gifting.

Notes

  • Chill the dough well to prevent peanut butter balls from breaking when dipping.
  • Leave a small spot free of chocolate to replicate the authentic Buckeye appearance.
  • Use parchment paper to prevent sticking and aid easy cleanup.
  • Keep chocolate warm during dipping by gently reheating as needed.
  • Store Buckeyes in an airtight container in the refrigerator to maintain freshness and texture.
