Instructions

  1. Prepare the Squash: Peel and cube the butternut squash into bite-sized pieces. Toss with olive oil, salt, and pepper. Roast in a preheated oven at 400°F (200°C) for about 25-30 minutes until caramelized and tender.
  2. Sauté Aromatics: While the squash is roasting, heat olive oil or butter in a large pot over medium heat. Add diced onions and minced garlic, sautéing until translucent and fragrant, about 5-7 minutes.
  3. Simmer the Soup: Add the roasted squash to the pot with onions and garlic. Pour in the broth and bring to a simmer. Cook for 15-20 minutes until the squash is very tender.
  4. Blend Until Smooth: Transfer the soup to a blender in batches or use an immersion blender directly in the pot. Blend until silky smooth and creamy.
  5. Add Creaminess and Season: Stir in coconut milk or heavy cream. Season with salt, pepper, and optional spices such as cinnamon or nutmeg. Heat gently on low-medium heat without boiling to keep the texture smooth.
