Ingredients

Scale

Proteins

  • 1 pound ground beef or turkey

Vegetables & Aromatics

  • 1 medium green cabbage, chopped into bite-sized pieces
  • 1 medium onion, minced
  • 23 cloves garlic, minced

Liquids & Tomatoes

  • 1 cup tomato sauce
  • 1 (14.5 oz) can diced tomatoes with juices (or 2 cups fresh chopped tomatoes)
  • 4 cups beef broth or stock (gluten-free if needed)

Grains

  • 1 cup cooked white rice (can substitute quinoa, barley, or cauliflower rice)

Fat for cooking

  • 2 tablespoons olive oil or butter

Seasonings

  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme

Instructions

  1. Prepare your ingredients: Chop the green cabbage into bite-sized pieces, mince the garlic and onion, and measure out your rice, seasonings, and liquids to ensure a smooth cooking process.
  2. Brown the meat: Heat olive oil or butter in a large pot over medium heat. Add the ground beef or turkey and cook until browned and no longer pink, breaking it apart with a wooden spoon for even cooking.
  3. Sauté aromatics: Add the chopped onion and garlic to the browned meat and stir frequently until they become translucent and fragrant, about 3 to 5 minutes.
  4. Add cabbage and seasoning: Stir in the chopped cabbage along with salt, pepper, paprika, and thyme. Cook for another 5 minutes to slightly soften the cabbage.
  5. Pour in tomatoes and broth: Add the diced tomatoes with their juices, tomato sauce, and beef broth to the pot. Stir well and bring the soup to a boil.
  6. Simmer: Reduce heat to low and let the soup simmer uncovered for 25 to 30 minutes, allowing flavors to blend and cabbage to become tender.
  7. Add cooked rice and finish: Stir in the cooked rice just before serving and heat through for a few minutes so the rice absorbs some broth.

Notes

  • Brown the meat well to add depth and a rich flavor base.
  • Don’t skip the simmer time to let flavors develop fully and tenderize the cabbage.
  • Use fresh cabbage when possible for the best texture and flavor.
  • Cook rice separately to avoid mushiness and ensure better texture.
  • Season gradually and taste as you go to achieve balanced flavors.
