Caramelized Onion Fettuccine is a rich and comforting pasta dish that combines the natural sweetness of slow-cooked yellow onions with tender fettuccine noodles. This versatile recipe is quick to prepare and can be easily adapted for vegan, vegetarian, or protein-enriched diets, making it ideal for weeknight dinners or special occasions.

Ingredients

Scale

For the Pasta and Sauce

  • 8 ounces fettuccine pasta
  • 3 large yellow onions, thinly sliced
  • 2 tablespoons butter or olive oil
  • 3 cloves fresh garlic, finely minced
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons fresh herbs (thyme or parsley), chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the onions: Thinly slice yellow onions. Heat a pan over medium-low heat and add butter or olive oil. Slowly cook the onions, stirring occasionally, until they turn a deep golden brown and smell sweet, about 25 to 30 minutes.
  2. Cook the pasta: While onions caramelize, bring a large pot of salted water to a boil. Add fettuccine and cook until al dente, generally 8 to 12 minutes per package instructions.
  3. Add aromatics: In the last few minutes of caramelizing onions, add finely minced garlic. Stir and cook until fragrant, about 1 minute, taking care not to burn it.
  4. Combine pasta and onions: Drain the cooked pasta, reserving some pasta water. Toss pasta into the skillet with caramelized onions, adding a splash of reserved pasta water to create a silky sauce that coats the noodles.
  5. Finish with cheese and herbs: Sprinkle freshly grated Parmesan and chopped herbs over the pasta. Gently toss to combine, then season with salt and pepper to taste. Serve immediately.

Notes

  • Patience is key when caramelizing onions; cook them low and slow to avoid burning.
  • Reserve some pasta water to adjust the sauce consistency for a smooth, light coating.
  • Always use freshly grated Parmesan cheese for the best melting texture and flavor.
  • Opt for artisan or bronze-cut fettuccine to better hold the sauce.
  • Add a splash of lemon juice or balsamic vinegar to brighten the flavors if the dish tastes too sweet.
