Scale

Main Ingredients

  • 2 cups fresh or roasted carrots (peeled and chopped)
  • 1 can (about 15 oz) cooked chickpeas, drained
  • 1/4 cup tahini
  • Juice of 1 lemon
  • 12 garlic cloves
  • 23 tablespoons olive oil
  • Pinch of salt
  • Ground cumin, paprika, and pepper (to taste)

Instructions

  1. Prepare the Carrots: Peel and chop about 2 cups of carrots into smaller pieces. Steam or boil them until tender, about 10 minutes, or roast at 400°F (200°C) for 20-25 minutes for a deeper flavor.
  2. Blend the Base Ingredients: In a food processor or blender, combine the cooked carrots, drained chickpeas, tahini, lemon juice, garlic cloves, and a pinch of salt.
  3. Process Until Smooth: Blend the mixture, gradually adding olive oil and water as needed until the hummus reaches your desired creamy consistency.
  4. Adjust the Flavor: Taste the hummus and add spices such as ground cumin, paprika, or pepper to your preference. Blend again briefly to incorporate the seasonings.
  5. Serve and Enjoy: Transfer the carrot hummus to a serving bowl. Drizzle with olive oil and garnish with fresh herbs, toasted nuts, or seeds as desired. Serve chilled or at room temperature.

Notes

  • Choose fresh, sweet carrots for the best natural flavor and color.
  • Use good quality tahini for smoothness and authentic flavor.
  • Adjust lemon juice gradually to avoid overpowering the taste.
  • Add water one tablespoon at a time to achieve perfect creamy texture without thinning too much.
  • Let the hummus chill in the refrigerator for a few hours; the flavors deepen and improve.
