Ingredients

Scale

Dough Ingredients

  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 1 cup warm water (105-110°F)
  • 1 teaspoon sugar
  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons olive oil

Filling Ingredients

  • 8 ounces mozzarella cheese, cut into small pieces

Garlic Butter Glaze

  • 4 tablespoons butter
  • 3 cloves garlic, freshly minced
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Prepare the dough: In a bowl, mix warm water, sugar, and active dry yeast. Let it activate for 5-10 minutes until foamy. Then, combine flour, salt, olive oil, and the yeast mixture. Stir to form a soft dough, knead on a floured surface until smooth and elastic. Place in a lightly oiled bowl, cover, and let rise in a warm spot for about 1 hour or until doubled in size.
  2. Shape the knots and add cheese: Once the dough has risen, punch it down and divide it into small equal portions. Roll each piece into a rope, place a small piece of mozzarella in the center, fold and pinch the dough around the cheese to seal it completely, then tie the rope into a knot shape.
  3. Bake the knots: Arrange the prepared knots on a greased baking sheet. Cover with a towel and let them rise again for 20-30 minutes. Preheat oven to 375°F (190°C). Bake the knots for 15-18 minutes until golden brown and the cheese is melted inside.
  4. Make the garlic butter glaze: While the knots bake, melt butter in a pan over low heat. Add freshly minced garlic and cook gently until fragrant. Remove from heat and stir in chopped fresh parsley, if using.
  5. Brush and serve: When the knots come out of the oven, generously brush them with the warm garlic butter glaze. Serve immediately for the best gooey cheese and rich garlic flavor experience.

Notes

  • Use warm but not hot water to activate yeast (105-110°F) to avoid killing it.
  • Ensure cheese is fully sealed inside the dough to prevent leakage during baking.
  • Do not skip the second rise after shaping knots to keep them fluffy and light.
  • Brush knots generously with garlic butter glaze for classic flavor and shine.
  • Serve fresh and warm to enjoy gooey cheese and tender texture.
