Instructions

  1. Prepare the Meatballs: In a mixing bowl, combine ground meat with finely chopped onion, minced garlic, Italian seasoning, salt, and pepper. Form small, even-sized meatballs. Heat olive oil in a pan over medium heat and brown the meatballs on all sides until golden, but do not cook them through to keep them juicy.
  2. Cook the Potatoes: Peel and slice the potatoes into thin rounds ensuring even thickness. Lightly toss the potato slices with olive oil, salt, and pepper. Partially cook them by boiling for 5 minutes or microwaving until just tender but not mushy, which helps achieve a creamy texture after baking.
  3. Sauté the Spinach: Heat olive oil in a pan and add fresh spinach with a pinch of salt. Sauté quickly until wilted to release excess water and intensify flavor, while preserving the vibrant green color.
  4. Assemble the Bake: Grease a baking dish. Layer half of the potato slices evenly at the bottom. Arrange the browned meatballs over the potatoes. Spread the sautéed spinach on top of the meatballs, then add the remaining potato slices as the final layer. Pour the cream and milk mixture evenly over all the layers.
