Chicken
- 2 boneless, skinless chicken breasts
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons olive oil
Pasta
- 8 ounces fettuccine pasta
- Salt, for pasta water
Alfredo Sauce
- 4 tablespoons butter
- 3 cloves fresh garlic, minced
- 1 1/2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- Salt and black pepper, to taste
Optional Garnish
- 2 tablespoons fresh parsley, chopped
- Prepare the Chicken: Season the chicken breasts generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for about 6-7 minutes per side until golden brown and cooked through. Remove from the pan and let it rest before slicing.
- Cook the Pasta: While the chicken cooks, bring a large pot of salted water to a boil. Cook the fettuccine according to package directions until al dente. Drain the pasta and set aside.
- Make the Alfredo Sauce: In the same skillet used for the chicken, reduce heat to medium and melt the butter. Add the minced garlic and sauté for 1-2 minutes until fragrant. Slowly pour in the heavy cream and let it simmer gently for 3-4 minutes until it thickens slightly.
- Add Parmesan and Season: Gradually whisk in the freshly grated Parmesan cheese until the sauce becomes smooth and creamy. Season the sauce with salt and black pepper to taste. Keep the sauce warm on low heat.
- Combine and Serve: Add the cooked pasta and sliced chicken back into the skillet with the Alfredo sauce. Toss gently to coat everything evenly. Garnish with freshly chopped parsley if desired and serve immediately.
Notes
- Use fresh Parmesan cheese for a more flavorful and creamy sauce.
- Do not overcook the chicken; cook it until just done and let it rest to keep it juicy.
- Simmer the sauce gently to avoid boiling, which can cause separation.
- If the sauce is too thick, add reserved pasta water to thin and help it coat the pasta better.
- Serve the dish immediately for best texture and flavor, as Alfredo sauce thickens when left to sit.
