Ingredients

Scale

Filling Ingredients

  • 2 cups shredded cooked chicken (leftover or rotisserie)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
  • 1/4 cup chopped green chilies or diced jalapeños (optional for mild to medium heat)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt (to taste)

Assembly Ingredients

  • 1012 small corn or flour tortillas
  • Oil for frying or cooking spray for baking

Optional Garnishes

  • Fresh cilantro, chopped
  • Lime wedges
  • Avocado or guacamole
  • Salsa
  • Sour cream

Instructions

  1. Prepare the Chicken Filling: Shred the cooked chicken into bite-sized pieces. In a mixing bowl, combine the shredded chicken with shredded cheese, green chilies or jalapeños if using, ground cumin, chili powder, garlic powder, and salt. Mix thoroughly to create a well-balanced and flavorful filling.
  2. Warm the Tortillas: Warm each tortilla for about 20 seconds in the microwave or on a skillet to make them pliable and easy to roll without cracking.
  3. Assemble the Taquitos: Place 2 to 3 tablespoons of the chicken mixture on the edge of each warmed tortilla. Roll tightly and place seam-side down on a baking sheet or plate to prevent unrolling during cooking.
  4. Cook Until Crispy: For frying: heat oil in a skillet and fry each taquito for 2-3 minutes per side until golden and crispy. For baking: arrange taquitos on a baking sheet, lightly spray or brush with oil, and bake at 425°F (220°C) for 15-20 minutes until crisp and golden brown.
  5. Serve Warm with Toppings: Transfer cooked taquitos to a serving plate and garnish with fresh cilantro, a squeeze of lime, and your favorite dipping sauces such as salsa, guacamole, or sour cream.

Notes

  • Don’t overfill the tortillas to prevent bursting during cooking.
  • Roll tortillas tightly and place seam-side down to keep filling secure.
  • If baking, use a non-stick spray or brush taquitos lightly with oil for even crispness.
  • Use warm chicken when mixing the filling to better meld flavors.
  • Rest cooked taquitos on a cooling rack to maintain crispiness and avoid sogginess.
