Ingredients

Scale

Main Ingredients

  • 1 lb boneless chicken thighs or breast, diced
  • 4 cups chicken broth (or vegetable broth for vegetarian version)
  • 2 cups ripe tomatoes, chopped or canned diced tomatoes
  • 1 cup white or brown rice, rinsed
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil

Herbs and Spices

  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh basil or thyme, chopped
  • Salt, to taste
  • Black pepper, to taste

Optional Add-Ins and Variations

  • Red chili flakes or diced jalapenos (for spicy kick)
  • Carrots, celery, or spinach (for extra vegetables)
  • Fresh herbs like cilantro, oregano, or dill (for herb-heavy variations)

Instructions

  1. Prepare the Ingredients: Dice the chicken into bite-sized pieces. Finely chop the onion and garlic. Rinse the rice under cold water until the water runs clear to prevent sticking later. Prepare the tomatoes by chopping or blending them according to your preferred texture.
  2. Sauté Aromatics and Chicken: Heat olive oil in a large pot over medium heat. Add chopped onions and garlic and sauté until fragrant and translucent. Add the diced chicken and cook until browned on the outside, sealing in juices for tender pieces.
  3. Add Tomatoes and Broth: Pour the chopped tomatoes and chicken broth into the pot. Stir well, scraping up any browned bits from the bottom to add flavor. Bring the soup to a gentle simmer and allow the flavors to blend for about 10 minutes.
  4. Cook the Rice: Add the rinsed rice to the simmering soup. Stir occasionally to ensure even cooking and absorption of the rich tomato-chicken broth. Depending on your rice choice, simmer for 15 to 20 minutes until the rice is tender.
  5. Final Herbal Touch and Seasoning: Once the rice is cooked and the soup has thickened slightly, stir in fresh herbs and season with salt and black pepper to taste. Remove the pot from heat and let the soup rest for a few minutes to deepen flavors before serving.

Notes

  • Use homemade chicken broth when possible for richer flavor and authenticity.
  • Rinse rice thoroughly to prevent clumping and achieve a smoother texture.
  • Simmer the soup gently; avoid boiling too hard to keep chicken tender and rice perfectly cooked.
  • Add fresh herbs at the end to preserve their aroma and brightness.
  • Adjust the soup’s thickness by cooking longer for thicker consistency or adding more broth for a thinner soup.
