Wrapping & Cooking

Instructions

  1. Prepare the filling: Cook and dice or shred the chicken. In a bowl, combine chicken, black beans, corn, chopped jalapeños, shredded cheese, sour cream, cumin, chili powder, garlic powder, and salt. Mix thoroughly to blend all flavors well.
  2. Fill the wrappers: Lay out each tortilla or eggroll wrapper on a clean surface. Spoon a generous amount of the filling into the center, spreading it evenly but leaving space on the edges for folding.
  3. Roll and seal: Fold the sides of the wrapper over the filling, then roll tightly from one end to the other. Moisten the edges with water or egg wash to seal securely and prevent opening during cooking.
  4. Cook the eggrolls: Heat a few inches of oil in a deep skillet or fryer to 350°F (175°C). Fry the eggrolls in batches for 3-5 minutes until golden brown and crispy. Remove and drain on paper towels. For a baked alternative, brush eggrolls with oil and bake at 400°F (205°C) for 15-20 minutes until crispy.
