Ingredients

Main Ingredients

  • Fresh arrowhead roots – 300g (about 2-3 medium roots)
  • Vegetable oil – enough for deep frying (about 2-3 cups)
  • Salt – 1 teaspoon (or to taste)
  • White pepper powder – 1/2 teaspoon

Optional Seasonings

  • Five-spice powder – 1/4 teaspoon
  • Chili powder or chili flakes – 1/4 teaspoon (for spicy twist)
  • Sugar – 1/2 teaspoon (for sweet and salty variation)
  • Rice flour – 2 tablespoons (for gluten-free coating)
  • Dried rosemary or thyme – 1/4 teaspoon (for herbal infusion)

Instructions

  1. Prepare the Arrowhead Roots: Wash the arrowhead roots thoroughly to remove dirt and impurities. Peel off the skin using a vegetable peeler, then slice the roots into very thin, even rounds about 1-2mm thick to ensure they fry into crispy chips, not chewy slices.
  2. Soak and Dry the Slices: Place the sliced arrowhead in a bowl of cold water for 10 minutes to rinse away excess starch and prevent discoloration. Drain and pat the slices completely dry with a clean kitchen towel, as dry slices fry better and crisp up beautifully.
  3. Heat the Oil: Fill a deep pan or wok with vegetable oil, enough for deep frying. Heat the oil to around 350°F (175°C). Test with a thermometer or a small chip to check if it bubbles immediately, indicating the oil is ready.
  4. Fry the Arrowhead Chips: Add the arrowhead slices in small batches carefully to avoid overcrowding. Fry them until they turn golden brown and float on the surface, about 2 to 3 minutes per batch.
  5. Drain and Season: Using a slotted spoon, transfer the chips to a paper towel-lined plate to drain excess oil. While still warm, sprinkle salt, white pepper, and any additional spices of your choice so the flavors adhere perfectly.

Notes

  • Uniform slicing ensures all chips cook evenly and crisp properly.
  • Maintain oil temperature around 350°F (175°C) to prevent greasiness.
  • Dry slices thoroughly before frying to avoid oil splatter and improve crispness.
  • Fry in small batches to preserve consistent crunchy texture.
  • Season immediately while chips are hot for best flavor adherence.
  • Store leftover chips in an airtight container at room temperature for up to 2 days.
  • Avoid freezing fried chips as they lose their crispness; freeze raw sliced arrowhead if preparing in advance.
  • Reheat chips in a preheated oven at 350°F (175°C) for 3-5 minutes to restore crispness.
