Perfectly suited for gifting or enjoying during reunion dinners, these cookies bring warmth and joy to Chinese New Year celebrations with their authentic taste, simple preparation, and beautiful presentation.

Ingredients

Peanut Filling

  • Roasted Peanuts – 1 cup
  • Powdered Sugar – 1/4 cup

Cookie Dough

  • All-Purpose Flour – 2 cups
  • Powdered Sugar – 1/2 cup
  • Butter – 1 cup (softened)
  • Egg Yolk – 1 large
  • Baking Powder – 1/2 teaspoon
  • Salt – 1/4 teaspoon

Instructions

  1. Prepare the Peanut Filling: Grind the roasted peanuts into a coarse texture, leaving some crunch. Mix with 1/4 cup powdered sugar until evenly blended. Set aside.
  2. Make the Cookie Dough: In a mixing bowl, cream the softened butter and 1/2 cup powdered sugar together until light and fluffy. Add the egg yolk and mix well. Gently fold in the all-purpose flour, baking powder, and salt, combining until a soft dough forms. Avoid overmixing.
  3. Shape the Cookies: Divide the dough into small portions. Flatten each portion, place a spoonful of peanut filling in the center, then wrap the dough around the filling. Roll into smooth balls or traditional shapes. Place on a lined baking tray, spacing evenly.
  4. Bake to Perfection: Preheat oven to 325°F (160°C). Bake cookies for 15-18 minutes until the bottoms are lightly golden. Cool on the tray, then transfer to a wire rack to cool completely.

Notes

  • Use fresh roasted peanuts and high-quality butter for best flavor.
  • Do not overmix the dough to keep cookies tender and crumbly.
  • Chill dough for 30 minutes before shaping to prevent spreading.
  • Shape cookies uniformly for even baking.
  • Store cookies in an airtight container to preserve crispness.
