Ingredients

Scale

Dough Ingredients

  • 3 1/2 cups all-purpose flour
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1 cup lukewarm milk
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 tsp salt

Filling Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup cocoa powder
  • 2 tbsp ground cinnamon
  • 3/4 cup semi-sweet chocolate chips

Glaze Ingredients

  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 23 tbsp milk

Instructions

  1. Prepare the Dough: Warm the milk until lukewarm. In a large bowl, dissolve the yeast in the milk with 1 tablespoon sugar and allow to bloom for 5 minutes until frothy. Add the flour, eggs, melted butter, remaining sugar, and salt gradually. Mix until a soft dough forms. Knead on a floured surface for 8-10 minutes until smooth and elastic. Place dough in a greased bowl, cover with a cloth, and let rise for 1 to 1.5 hours until doubled.
  2. Make the Filling: While the dough rises, combine softened butter, brown sugar, cocoa powder, cinnamon, and chocolate chips in a bowl. Mix well and set aside to meld flavors.
  3. Roll and Fill the Dough: Punch down the risen dough gently. Roll out on a floured surface into a 12×16 inch rectangle. Spread the chocolate-cinnamon filling evenly over the dough, covering all edges.
  4. Shape and Slice: Roll the dough tightly from the long edge into a log, sealing the edge with a little water. Slice the log into 12 equal rolls. Place rolls in a greased or parchment-lined baking pan with some space between them.
  5. Final Rise and Bake: Cover loosely and let the rolls rise for 30-45 minutes until puffy. Preheat oven to 350°F (175°C). Bake rolls for 25-30 minutes until golden brown and cooked through but still soft inside.
  6. Glaze and Serve: Whisk powdered sugar, vanilla extract, and milk to make a smooth glaze. Drizzle glaze over warm rolls once slightly cooled for a shiny, sweet finish.

Notes

  • Use lukewarm milk (about 100-110°F) to properly activate yeast.
  • Allow dough to rise fully twice for best texture.
  • Spread filling evenly to ensure flavorful rolls.
  • Use a serrated knife to slice the rolled dough without squishing it.
  • Bake on the middle rack for even baking and browning.
