Chocolate Covered Cherries

Chocolate Covered Cherries combine ripe, juicy cherries with a smooth, rich chocolate coating for a decadent treat perfect for gifting, snacking, or special celebrations. Effortlessly elegant and customizable, these homemade delights offer a satisfying balance of tart cherry flavor and luscious chocolate with a crisp finish.

Ingredients

Scale

Cherries

  • 1 pound fresh ripe cherries with stems

Chocolate Coating

  • 8 ounces good-quality dark, milk, or white chocolate chips or chopped bars
  • 1 teaspoon corn syrup or coconut oil (optional, for smoothness and shine)

Optional Additions

  • 1 tablespoon powdered sugar or honey (to balance tartness, optional)
  • 12 tablespoons cherry liqueur or brandy (optional, for adult variation)
  • Crushed nuts like pistachios or almonds (for rolling/dressing)
  • Sprinkles, colored sugar, or freeze-dried crushed raspberries (for decoration)

Instructions

  1. Prepare the Cherries: Wash and dry the cherries thoroughly, ensuring no moisture remains on the surface to prevent chocolate from seizing. Leave the stems intact for easier dipping and better presentation.
  2. Melt the Chocolate: Gently melt your chosen chocolate in a double boiler or microwave using short bursts, stirring frequently to avoid overheating. Stir in corn syrup or coconut oil if using to create a smooth, glossy coating.
  3. Dip the Cherries: Hold each cherry by the stem and fully dip it into the melted chocolate. Let excess chocolate drip off before placing the cherry on parchment paper or a silicone mat to set.
  4. Let Them Set: Allow the chocolate to harden at room temperature or refrigerate the dipped cherries for 20 to 30 minutes until firm.
  5. Optional Decoration: Before the chocolate sets completely, optionally sprinkle with crushed nuts, colored sugar, or drizzle with contrasting chocolate for added flair.

Notes

  • Always thoroughly dry cherries to avoid chocolate seizing and to ensure proper adhesion.
  • Use premium quality chocolate for better meltability and richer taste.
  • Melt chocolate gently; overheating can cause grainy texture or burning.
  • Allow enough setting time for a shiny and crisp chocolate coating.
  • Store cherries in a cool place but avoid freezing to preserve texture and flavor.
