Ingredients

Scale

Dry Ingredients

  • 1 ¾ cups all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¾ cup granulated sugar
  • ¼ teaspoon salt

Wet Ingredients

  • 2 large eggs (room temperature)
  • ¾ cup milk (room temperature)
  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract

Swirl & Optional

  • ½ cup creamy peanut butter
  • ½ cup chocolate chips (optional)

Instructions

  1. Prepare Your Batter: Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners. In a large bowl, whisk together the dry ingredients — flour, cocoa powder, baking powder, baking soda, sugar, and salt. In another bowl, beat the eggs, then mix in milk, vegetable oil, and vanilla extract until well combined.
  2. Combine Wet and Dry Ingredients: Slowly add the wet ingredients into the dry ingredients, folding gently with a spatula to avoid overmixing. Stir until just combined and the batter is smooth and thick.
  3. Create the Peanut Butter Swirl: Drop spoonfuls of batter into the muffin cups, filling about halfway. Add a dollop of creamy peanut butter on top of each muffin’s batter. Then, fill the cups with remaining chocolate batter or use a knife to gently swirl the peanut butter and chocolate batter together to create the signature swirl effect.
  4. Bake to Perfection: Bake the muffins for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean with some crumbs. Let the muffins cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Use eggs and milk at room temperature for better mixing and texture.
  • Fold the batter gently to avoid overmixing, which can cause dense muffins.
  • Natural peanut butter with oil separation works best; stir before using for a creamier swirl.
  • Ensure your oven is properly preheated for even baking.
  • Use a toothpick to gently swirl the peanut butter into the batter without fully mixing for distinct swirls.
  • Optional: Add chocolate chips into the batter or on top for extra chocolate bursts.
  • For a vegan version, replace eggs with flax eggs, use plant-based milk and vegan peanut butter.
  • To make gluten-free muffins, substitute the all-purpose flour with a gluten-free baking mix.
