Instructions

  1. Prepare Your Ingredients: Finely chop the onions, garlic, and bell peppers. Slice the chorizo into bite-sized pieces to ensure even cooking and flavor distribution.
  2. Brown the Chorizo: Heat olive oil in a large pot over medium heat. Add the chorizo slices and cook until they release their oils and the edges turn crispy, infusing the stew with deep flavor.
  3. Sauté Aromatics: Add chopped onions, garlic, and bell peppers to the pot. Sauté until onions become translucent and peppers soften, stirring occasionally to avoid burning.
  4. Add Spices and Tomatoes: Sprinkle smoked paprika over the sautéed vegetables and stir thoroughly. Pour in the diced tomatoes and cook down so the flavors meld and intensify.
  5. Combine Chickpeas and Broth: Drain and rinse chickpeas before adding them to the pot. Pour in the broth, bring the mixture to a simmer, and let it cook gently to deepen flavors and thicken the stew.
