Instructions

  1. Prepare the Cilantro Pesto: Wash and roughly chop the cilantro. In a food processor, combine the cilantro, pine nuts or walnuts, grated Parmesan, garlic cloves, lemon juice, salt, and pepper. Slowly drizzle in the olive oil while pulsing until the mixture is smooth but slightly chunky. Taste and adjust seasoning as needed.
  2. Marinate the Chicken Tenders: Place the chicken tenders in a bowl and coat evenly with about half of the cilantro pesto. Let marinate for at least 10 minutes at room temperature, or up to 1 hour in the refrigerator for enhanced flavor and tenderness.
  3. Cook the Chicken Tenders: Heat a skillet over medium heat and add a drizzle of olive oil. Cook the marinated chicken tenders for 3-4 minutes per side until golden brown and cooked through. Avoid overcrowding the pan to ensure even cooking. Chicken is done when internal temperature reaches 165°F (75°C).
