Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup sugar
  • 1 tsp ground cinnamon

Wet Ingredients

  • 3/4 cup milk (room temperature)
  • 2 large eggs (room temperature)
  • 4 oz cream cheese, softened (plus extra for glaze)
  • 1 tsp vanilla extract

Fruit Mixture

  • 1 1/2 cups fresh peaches, peeled and chopped
  • 1 tsp sugar (for peach cooking)
  • 1/2 tsp ground cinnamon (for peach cooking)

Toppings

  • 2 tbsp butter (optional for glazing or topping)
  • 1/2 cup powdered sugar (for cream cheese glaze)
  • 12 tbsp milk (for cream cheese glaze)

Instructions

  1. Prepare the Peach Mixture: Peel and chop fresh peaches into small pieces. Toss them with 1 tsp sugar and 1/2 tsp ground cinnamon. Cook gently in a skillet over medium heat until the peaches are soft and fragrant, releasing their natural juices. Remove from heat and let cool slightly.
  2. Make the Donut Batter: In a large bowl, whisk together the all-purpose flour, baking powder, salt, sugar, and 1 tsp ground cinnamon. In another bowl, combine milk, eggs, vanilla extract, and 4 oz softened cream cheese. Mix until smooth. Slowly pour the wet ingredients into the dry ingredients, stirring gently until just combined; do not overmix to keep the donuts tender.
  3. Fold in the Peaches: Lightly toss the cooked peach mixture with a small amount of flour to prevent sinking, then gently fold the peaches into the batter, distributing them evenly without mashing.
  4. Fill and Bake: Preheat oven to 350°F (175°C). Grease a donut pan and fill each cavity about two-thirds full with the batter. Bake for 15-18 minutes, until donuts are golden brown and springy to the touch. Avoid overbaking to keep them moist.
  5. Prepare the Cream Cheese Topping: While donuts bake, combine softened cream cheese, powdered sugar, and a splash of milk to create a smooth glaze. Once donuts have cooled slightly, spread or drizzle the glaze over each donut for an indulgent finish.

Notes

  • Use room-temperature eggs, milk, and cream cheese for smoother batter and better texture.
  • Mix batter until just combined to avoid dense donuts.
  • Fresh peaches provide the best flavor and moisture; thawed frozen peaches can be substituted if needed.
  • Watch baking time closely; baking beyond 18 minutes can dry out the donuts.
  • Cool donuts slightly before glazing to prevent the glaze from melting too much.
  • For vegan alternatives, use plant-based cream cheese, egg replacers, and non-dairy milk.
  • Toss peaches lightly in flour before folding in to prevent sinking.
