Ingredients

Scale

Main Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 3 tbsp freshly squeezed lemon juice
  • 1/4 cup dry white wine (or substitute with broth)
  • 2 tbsp fresh parsley, chopped
  • 1/4 tsp red pepper flakes
  • Salt and pepper, to taste

Optional

  • 8 oz linguine or spaghetti pasta, cooked al dente
  • Lemon wedges, for serving
  • Grated Parmesan cheese, for garnish

Instructions

  1. Prepare the Shrimp: Start by peeling and deveining the shrimp if not already done. Pat them dry carefully to ensure proper searing. Lightly season the shrimp with salt and pepper.
  2. Cook the Shrimp: Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the shrimp and cook for 1-2 minutes on each side, until they turn pink and opaque. Remove the shrimp and set aside on a plate.
  3. Make the Sauce: Lower the heat to medium, then add the minced garlic to the same skillet. Sauté for 30 seconds to 1 minute until fragrant but not browned. Pour in the white wine and lemon juice, letting the mixture simmer for 2-3 minutes to reduce slightly and concentrate the flavors.
  4. Finish the Sauce: Add the remaining butter to the pan and stir until melted, forming a silky sauce. Return the cooked shrimp along with any juices back to the skillet, tossing to coat evenly. Sprinkle in red pepper flakes and fresh parsley, then season with salt and pepper to taste.
  5. Serve Warm: If using pasta, toss the shrimp and sauce with the cooked pasta until combined. Plate immediately and serve with lemon wedges and optional grated Parmesan cheese.

Notes

  • Dry the shrimp well before cooking to get a nice sear and texture.
  • Avoid overcooking the shrimp; remove as soon as they turn pink to prevent rubberiness.
  • Use freshly squeezed lemon juice for the best bright and natural acidity.
  • Simmer the sauce gently to reduce and concentrate flavors without burning the garlic.
  • If adding pasta, reserve a little pasta water to help the sauce cling better when mixing.
