Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine ground chicken, panko breadcrumbs, minced garlic, grated ginger, finely chopped green onions, curry powder, egg, salt, and pepper. Mix gently until just combined to keep the meatballs tender.
  2. Form the Meatballs: Shape the mixture into small, even-sized meatballs, about 1 to 1.5 inches in diameter. This ensures they cook quickly and evenly.
  3. Cook the Meatballs: Heat a drizzle of oil in a large skillet over medium heat. Add the meatballs and cook until golden brown on all sides, about 5-7 minutes, turning carefully to avoid breaking them.
  4. Make the Coconut Curry Sauce: Remove the meatballs from the pan and set aside. In the same skillet, add a little more oil if needed and sauté additional garlic and ginger, then pour in the coconut milk along with extra curry powder or paste, stirring well to create a smooth sauce.
