Ingredients

Scale

Croissant Dough

  • 1 sheet store-bought croissant dough (or equivalent homemade croissant dough)
  • Butter, as needed for folding (if homemade)

Cookie Dough

  • ½ cup (115g) unsalted butter, softened
  • ¼ cup (50g) granulated sugar
  • ¼ cup (50g) brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour (or gluten-free baking blend for GF option)
  • ½ teaspoon baking powder (ensure gluten-free if needed)
  • ½ cup (90g) chocolate chips or chunks

Instructions

  1. Prepare the croissant dough: If using store-bought croissant dough, gently unroll it and allow it to come to room temperature. This makes it easier to work with and helps maintain its flaky structure during baking.
  2. Make the cookie dough: In a mixing bowl, cream together the softened butter and both granulated and brown sugars until light and fluffy. Add the egg and vanilla extract and mix well. Gradually incorporate the flour and baking powder, mixing until just combined. Fold in the chocolate chips or chunks carefully to keep the texture intact.
  3. Assemble the Crookies: Roll out the croissant dough on a lightly floured surface to smooth any creases. Spoon a generous, even layer of cookie dough onto half of the croissant dough rectangle, leaving a small border around the edges. Fold the other half of the croissant dough over the cookie dough and gently press the edges to seal without squeezing out the filling.
  4. Proof and chill: Place the assembled crookies on a parchment-lined baking sheet. Cover with a clean cloth and let them rest for 20–30 minutes to relax the dough and trigger a slight proofing before baking.
  5. Bake to golden perfection: Preheat your oven to 375°F (190°C). Bake the crookies for 15–20 minutes, or until the tops are golden brown and crispy, and the cookie center is just set yet still luscious and gooey inside.
  6. Cool and enjoy: Let the Cookie Croissant cool slightly on a wire rack so it firms up enough to handle while remaining soft and gooey inside. Serve warm and enjoy your Parisian treat!

Notes

  • Let croissant dough come to room temperature before shaping to prevent cracking.
  • Use moderate amounts of cookie dough to avoid leaks during baking while ensuring rich flavor.
  • Chill the cookie dough slightly before spreading for easier handling and cleaner layers.
  • Check early while baking to avoid overbrowning; ovens may vary.
  • Choose high-quality melting chocolate for superior taste and texture.
