Instructions

  1. Prepare Your Ingredients: Rinse and dice the potatoes into bite-size cubes. Finely chop the onions and garlic. If using fresh corn, carefully cut kernels off the cob.
  2. Cook Aromatics and Bacon (if using): In a large pot, cook chopped bacon until crisp. Remove bacon pieces, leaving the rendered fat in the pot. Use this fat to sauté the onions and garlic until soft and fragrant.
  3. Simmer Potatoes and Corn: Add diced potatoes and corn kernels to the pot. Pour in the broth or stock. Bring to a gentle boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. Blend Partially (Optional): For a creamier chowder, use an immersion blender to pulse about half of the soup until smooth, leaving some chunks for texture.
  5. Stir in Cream and Seasonings: Reduce heat to low. Add cream or milk, cooked bacon (if used), and season with salt, pepper, and fresh herbs. Heat gently without boiling to avoid curdling.
