Instructions

  1. Prepare the asparagus: Trim the tough ends off the asparagus stalks and cut them into smaller segments. Save the tips separately as they cook faster and will be added later to enhance texture.
  2. Sauté the aromatics: In a large pot, heat butter or olive oil over medium heat. Add the finely chopped onions or shallots and garlic, cooking until soft and fragrant but not browned.
  3. Cook the asparagus: Add the asparagus pieces (except the reserved tips) to the pot and stir briefly to coat them in the aromatics. Pour in the broth and bring the mixture to a simmer. Cook until the asparagus is tender, about 8-10 minutes.
  4. Blend the soup: Use an immersion blender to purée the soup in the pot until completely smooth, or transfer the mixture carefully to a countertop blender and blend until velvety smooth. Return the soup to the pot if needed.
  5. Add cream and season: Stir in the cream or your chosen dairy alternative. Season with salt, pepper, and a splash of lemon juice if using. Add the reserved asparagus tips and cook for another 3-5 minutes until the tips are tender but still bright green.
