Creamy Chicken Noodle Soup

Creamy Chicken Noodle Soup

Creamy Chicken Noodle Soup is a comforting and hearty dish combining tender chicken, chewy egg noodles, and a rich, silky creamy broth. Perfect for chilly days or anytime you need warm, satisfying flavors with a velvety texture that feels like a warm hug in a bowl.

Ingredients

Scale

Protein

  • 1 lb boneless, skinless chicken breasts or thighs

Pasta

  • 6 oz classic egg noodles

Broth and Dairy

  • 6 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp unsalted butter (for roux)

Roux Ingredients

  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour

Vegetables and Aromatics

  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced

Herbs and Seasonings

  • 2 tbsp fresh parsley or thyme, chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Aromatics: Melt butter in a large pot over medium heat. Add finely chopped onions, garlic, carrots, and celery. Cook, stirring occasionally, until vegetables are softened and fragrant, about 5-7 minutes. This builds the flavor foundation of the soup.
  2. Cook the Chicken: Add the chicken pieces to the pot and cook until lightly browned on both sides to lock in the juices and add richness. Then pour in the chicken broth and bring the mixture to a gentle simmer.
  3. Make the Roux: In a separate small pan, melt butter over medium heat. Whisk in the flour and cook until the mixture turns golden and bubbly, forming a roux that will thicken your soup.
  4. Combine and Cook Noodles: Slowly whisk the roux into the simmering broth mixture, stirring continuously to prevent lumps. Add egg noodles and cook until tender but not mushy, allowing them to absorb the rich flavors.
  5. Finish with Cream and Herbs: Reduce the heat to low. Stir in the heavy cream and fresh herbs like parsley or thyme. Adjust the seasoning with salt and pepper to taste. Warm through gently without boiling to maintain a silky smooth texture.

Notes

  • Use homemade chicken broth for deeper flavor.
  • Add noodles towards the end to avoid overcooking and mushiness.
  • Shred cooked chicken for easier eating.
  • Temper the cream by adding it slowly and stirring constantly to prevent curdling.
  • Add fresh herbs at the very end for maximum freshness and flavor.
