Instructions

  1. Prep Your Ingredients: Slice the chicken breasts into bite-sized pieces. Trim the asparagus into 1–2 inch segments, clean and slice the mushrooms, and mince the garlic and shallots. This prepping saves time later and ensures even cooking.
  2. Cook the Penne Pasta: Bring a large pot of salted water to a boil and cook the penne until al dente, about 10 minutes depending on the brand. Drain and set aside, reserving some pasta water for the sauce.
  3. Sear the Chicken: Heat olive oil or butter in a large skillet over medium-high heat. Add the chicken pieces, seasoning with salt and pepper, and cook until golden and just cooked through, about 5–7 minutes. Remove from the skillet and set aside.
