Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp dried Italian herbs (oregano, basil, thyme)

Cooking Base

  • 1 tbsp olive oil
  • 1 tbsp butter

Sauce

  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, chopped (preferably oil-packed)
  • 1 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 2 cups fresh spinach

Instructions

  1. Prepare and Season the Chicken: Pat the chicken breasts dry with paper towels. Season generously on both sides with salt, pepper, and dried Italian herbs to build a flavorful base.
  2. Brown the Chicken: Heat olive oil and butter in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook until golden brown on both sides but not fully cooked through, about 3-4 minutes per side. Remove the chicken and set aside.
  3. Sauté Garlic and Sun-Dried Tomatoes: In the same skillet, reduce heat to medium and sauté minced garlic and chopped sun-dried tomatoes until fragrant, about 1-2 minutes, allowing the flavors to infuse the oil.
  4. Create the Creamy Sauce: Lower the heat to medium-low. Stir in the heavy cream and grated parmesan cheese. Add the fresh spinach and cook, stirring, until the cheese melts and the spinach wilts, forming a thick, luscious sauce.
  5. Finish Cooking the Chicken in Sauce: Return the browned chicken breasts to the skillet. Spoon sauce over them and simmer gently on low heat until the chicken is cooked through, about 5-7 minutes. This allows the chicken to absorb the creamy, savory flavors.
  6. Garnish and Serve: Remove from heat and sprinkle with fresh basil or parsley leaves. Serve hot alongside your preferred side dishes and enjoy.

Notes

  • Patting the chicken dry ensures a perfect sear and better flavor.
  • Use chicken at room temperature for even cooking and to maintain juiciness.
  • Simmer the cream sauce gently on low heat to prevent curdling.
  • Opt for sun-dried tomatoes packed in oil for deeper flavor.
  • Finish with fresh herbs like basil or parsley for a vibrant finish.
