Ingredients

Scale

Basic Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 2 tablespoons melted butter
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract (optional, for sweet crepes)

Instructions

  1. Prepare the Batter: In a large mixing bowl, whisk together the flour and salt. In a separate bowl, beat the eggs with the milk and melted butter. Slowly pour the wet mixture into the dry ingredients, whisking continuously until the batter is smooth and slightly runny. Let it rest for 10-15 minutes to hydrate the flour and improve texture.
  2. Heat the Pan: Preheat a non-stick skillet or crepe pan over medium heat. Lightly grease the surface with butter or oil using a paper towel to avoid excess fat. The pan should be hot enough that a drop of batter sizzles immediately.
  3. Cook the Crepes: Pour about 1/4 cup of batter into the center of the pan and quickly tilt and swirl it around until it evenly coats the surface. Cook for about 1 minute or until the edges lift and the bottom turns golden. Flip using a spatula and cook the other side for another 30 seconds. Repeat with remaining batter.
  4. Fill and Serve: Once cooked, transfer crepes to a plate and layer with your choice of fillings and toppings while still warm. Fold or roll the crepes as preferred, and serve immediately for the best taste and texture.

Notes

  • Batter Consistency: Aim for a thin, pourable batter similar to heavy cream for ultra-thin crepes.
  • Rest Time: Letting the batter rest helps create tender, flexible crepes.
  • Temperature Control: Use medium heat to avoid burning and ensure even cooking.
  • Use the Right Pan: A dedicated crepe pan or flat non-stick skillet gives the best results.
  • Keep Them Warm: Stack cooked crepes covered with foil or a clean towel to keep warm without drying out.
