Instructions

  1. Prepare the Tomatoes: Wash and halve the tomatoes. Toss them with 1 tablespoon olive oil, salt, pepper, and minced garlic. Spread evenly on a baking sheet and roast in a preheated oven at 400°F (200°C) for 15-20 minutes until soft and caramelized.
  2. Slice and Prepare Halloumi: While tomatoes roast, cut halloumi into ½ inch thick slices. Pat dry with paper towels to remove excess moisture for maximum crispiness.
  3. Cook the Halloumi: Heat a non-stick skillet over medium heat and add 1 tablespoon olive oil. Place halloumi slices in the pan and cook 2-3 minutes per side until golden brown and crispy on the outside but soft inside.
  4. Combine and Finish: Remove skillet from heat and add roasted tomatoes. Drizzle with fresh lemon juice and sprinkle chopped fresh herbs on top. Gently toss the ingredients together while keeping halloumi slices intact to meld flavors.
