Instructions

  1. Prep Your Potatoes: Wash, peel, and thinly slice the russet potatoes about 1/8 inch thick using a mandoline or sharp knife. Thinner slices ensure better stacking and crispiness.
  2. Season and Layer: Toss the potato slices in melted butter, salt, pepper, and any optional spices or herbs. Lightly grease the muffin tin with olive oil or cooking spray. Begin layering the slices vertically, stacking enough to form a muffin-sized tower in each cup.
  3. Add Cheese and Bake: Sprinkle grated cheese between layers or on top as preferred. Preheat the oven to 375°F (190°C) and bake for 45 to 60 minutes, until the potatoes are cooked through and edges are golden and crispy.
  4. Cool and Release: Let the muffins cool slightly to firm up. Carefully loosen the edges with a small knife and gently remove each muffin from the tin for serving.
