  • 2/3 cup milk

  • Optional: 1/2 cup shredded cheddar cheese
  • Optional: additional herbs such as rosemary or sage

Instructions

  1. Prepare the chicken and vegetables: Trim excess fat from the chicken thighs and cut the carrots, celery, and onion into bite-sized pieces to ensure even cooking and create a flavorful base.
  2. Layer in the crockpot: Place the chicken thighs at the bottom of the crockpot, then add the chopped carrots, celery, and onion. Pour in the chicken broth and season with salt, pepper, thyme, and parsley. Set the crockpot to low and cook for about 6 hours.
  3. Mix and add the dumplings: About 30 minutes before the cooking time ends, combine the biscuit mix, milk, melted butter, and any optional ingredients like shredded cheese or extra herbs to make the dumpling dough. Drop spoonfuls of the dough over the simmering stew in the crockpot.
