Ingredients

Scale

Vegetables

  • 4 cups thinly sliced green cabbage
  • 1 cup julienned carrots
  • 1 cup thinly sliced red bell pepper
  • ¼ cup fresh cilantro, finely chopped

Peanut Dressing

  • ¼ cup natural unsweetened peanut butter
  • 2 tablespoons rice vinegar
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons fresh lime juice
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 23 tablespoons water (as needed to thin)

Toppings & Optional

  • ¼ cup chopped peanuts (lightly toasted recommended)
  • Chili flakes or Sriracha, to taste (optional)

Instructions

  1. Prepare the Vegetables: Thinly slice the green cabbage, carrots, and red bell pepper. Finely chop the fresh cilantro, then set aside for tossing later. Ensure all vegetables are crisp and fresh to achieve the perfect crunch in the slaw.
  2. Make the Peanut Dressing: In a bowl, whisk together peanut butter, rice vinegar, soy sauce or tamari, honey or maple syrup, lime juice, minced garlic, and grated ginger until smooth and creamy. Add water gradually if the dressing is too thick to make it easier to coat the vegetables evenly.
  3. Toss the Slaw: Combine the sliced cabbage, carrots, bell pepper, and cilantro in a large mixing bowl. Pour the peanut dressing over the vegetables and toss well until everything is thoroughly coated and glistening with flavor.
  4. Add Final Touches: Sprinkle chopped peanuts and optional chili flakes or Sriracha on top for added texture and a mild heat boost. Taste the slaw and adjust seasoning by adding more lime juice or soy sauce if desired.

Notes

  • Use fresh, crisp vegetables for the best texture and flavor.
  • Adjust the thickness of the peanut dressing with water to avoid it becoming too runny.
  • Let the slaw rest for 10-15 minutes after tossing to allow flavors to meld but avoid sogginess.
  • Lightly toast peanuts before chopping to enhance their flavor and crunch.
  • Include a variety of colorful vegetables to make the dish visually appealing and nutrient-rich.
