  • ¾ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup brewed strong coffee, cooled to room temperature

  • 1 cup chopped dates (about 68 Medjool dates)

Instructions

  1. Prepare the Dates and Coffee: Chop the dates into small pieces for even sweetness distribution. Brew a strong cup of coffee and let it cool to room temperature.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt to evenly combine the leavening agents.
  3. Cream Butter and Sugar: In a separate bowl, beat the softened butter (or oil) and brown sugar until light and fluffy to incorporate air for a lighter texture.
  4. Add Eggs and Vanilla: Beat the eggs in one at a time into the butter and sugar mixture, then stir in the vanilla extract for richness.
  5. Combine Wet and Dry Ingredients: Alternately add the dry ingredients and brewed coffee to the wet mixture, starting and ending with the dry. Gently fold in chopped dates, taking care not to overmix.
  6. Bake Your Loaf: Pour the batter into a greased loaf pan and bake at 350°F (175°C) for 50-60 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pan before transferring to a wire rack.
