Filling Ingredients

  • 1 can (15 oz) cooked chickpeas, drained and rinsed
  • 8 oz mushrooms, finely chopped
  • 1/2 cup walnuts, chopped
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1 tsp fresh rosemary, chopped
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh sage, chopped
  • 1/2 tsp smoked paprika
  • 1/2 cup vegetable broth
  • 2 tbsp olive oil

Mashed Potato Layer

  • 3 cups mashed potatoes (prepared creamy and smooth, from scratch or store-bought)
  • Olive oil for brushing

Instructions

  1. Prepare the Filling: Start by heating olive oil in a pan and sauté the finely chopped onions, carrots, and mushrooms until tender and fragrant, about 5-7 minutes. In a bowl, mash the cooked chickpeas roughly and combine with the sautéed vegetables, chopped walnuts, breadcrumbs, garlic, herbs (rosemary, thyme, sage), smoked paprika, and vegetable broth added gradually. Mix until the mixture holds together but is not too wet.
  2. Prepare the Mashed Potato Layer: While the filling cools slightly, prepare creamy mashed potatoes using your favorite method—either homemade with boiled potatoes or store-bought. Ensure the potatoes are smooth and creamy for easy spreading.
  3. Assemble the Roast: On a baking sheet lined with parchment paper, spread half of the mashed potatoes into an oval shape. Spoon the entire filling mixture evenly on top, then cover it with the remaining mashed potatoes, sealing the edges completely to enclose the filling.
  4. Bake until Golden: Brush the outer potato layer with olive oil to create a glossy, golden crust. Bake in a preheated oven at 375°F (190°C) for 30-40 minutes until golden brown and slightly crisp on the outside.
  5. Let It Rest and Slice: Remove from the oven and allow the roast to rest for at least 10 minutes to set. This step helps achieve clean slices and enhances the flavors before serving.

Notes

  • Use firm mushrooms and well-drained chickpeas to prevent excess moisture and sogginess.
  • Adjust the thickness of the mashed potato crust to balance between crispy crust and soft filling.
  • Fresh herbs (rosemary, thyme, sage) provide better aroma and flavor than dried ones.
  • Add breadcrumbs gradually to ensure proper binding without crumbling.
  • Brush olive oil on the potato crust for an appealing golden color and glossy finish.
