Ingredients

Scale

Chocolate Base

  • 1 cup semisweet chocolate chips
  • 1 cup white chocolate chips
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Cookie Pieces

  • 1 cup chocolate cookie pieces, coarsely crushed

Optional Add-ins (Variations)

  • Chopped almonds, pecans, or walnuts (to taste)
  • Dried raspberries or cherries (to taste)
  • Sprinkle of cinnamon or cayenne pepper (to taste)
  • Caramel sauce (for drizzling)
  • Dairy-free chocolate chips and coconut oil (for vegan version)

Instructions

  1. Step 1: Melt the Chocolates – Gently melt the semisweet and white chocolate chips together with the butter in a double boiler or microwave-safe bowl in short intervals, stirring frequently until the mixture is smooth and glossy.
  2. Step 2: Add Vanilla and Salt – Stir in the vanilla extract and a pinch of sea salt into the melted chocolate to enhance the depth of flavor.
  3. Step 3: Prepare Cookie Pieces – Coarsely crush the chocolate cookies by hand, with a rolling pin, or pulse a few times in a food processor to get uneven chunks that add texture throughout the bark.
  4. Step 4: Mix and Pour – Fold most of the crushed cookie pieces into the melted chocolate mixture, reserving some to sprinkle on top. Then, pour the mixture onto a parchment-lined baking sheet.
  5. Step 5: Spread and Chill – Use a spatula to spread the mixture evenly into a thin layer about 1/4 inch thick. Top with the remaining cookie pieces and refrigerate for at least one hour until fully set.
  6. Step 6: Break into Pieces – Once firm, remove from the fridge and gently break the bark into irregular pieces, perfect for snacking, sharing, or gifting.

Notes

  • Choose high-quality chocolate for the best flavor and texture.
  • Stir frequently while melting the chocolate to prevent burning or seizing.
  • Use freshly crushed cookies to maintain crunchy texture over time.
  • Spread bark evenly but avoid making it too thin; approximately 1/4 inch thick is ideal.
  • Chill the bark completely to ensure it sets well and breaks nicely.
