The Dubai Chocolate Bar is a luxurious and exotic treat that blends rich dark or milk chocolate with Middle Eastern spices, toasted nuts, and tropical flavors. This easy-to-make dessert combines bold fusion flavors and textures for a satisfying snack or impressive gift, customizable to any taste or dietary preference.

Ingredients

Scale

Chocolate Base

  • 200g high-quality dark or milk chocolate (at least 60% cocoa)
  • 1 tsp vanilla extract

Flavorings and Sweeteners

  • 1/2 tsp cardamom powder
  • 2 tbsp honey or date syrup (or maple syrup/agave nectar for vegan)
  • A pinch of sea salt flakes

Mix-ins and Toppings

  • 1/2 cup mixed nuts (pistachios, almonds, cashews), roughly chopped and toasted
  • 1/4 cup toasted coconut flakes
  • Optional toppings: extra nuts, coconut flakes, sea salt flakes

Instructions

  1. Prepare Ingredients: Chop the mixed nuts roughly and toast them lightly in a dry pan for a few minutes until aromatic. Measure out chocolate pieces, spices, sweeteners, and mix-ins beforehand to streamline the process.
  2. Melt the Chocolate: Using a double boiler or microwave in short bursts, melt the chocolate slowly, stirring frequently to achieve a smooth, glossy consistency without burning.
  3. Combine Ingredients: Mix the melted chocolate with cardamom powder, vanilla extract, and your chosen sweetener. Stir in the toasted nuts and coconut flakes to ensure they are evenly coated with the chocolate.
  4. Pour and Spread: Line a baking tray with parchment paper. Pour the chocolate mixture onto it and spread evenly with a spatula to about half an inch thickness for best texture.
  5. Add Toppings and Chill: Sprinkle sea salt flakes and any extra toppings on the surface. Place the tray in the refrigerator for at least two hours or until the bar is completely set and firm.
  6. Cut and Serve: Remove the set chocolate slab from the tray and slice into bars or bite-sized pieces with a sharp knife. Store in an airtight container or serve immediately for optimal freshness.

Notes

  • Temper the chocolate by gently cooling it before pouring for a shiny finish and smooth snap.
  • Ensure nuts and coconut flakes are dry to prevent chocolate from seizing or becoming grainy.
  • Use parchment paper to keep edges clean and to easily remove the bar from the tray.
  • Adjust thickness to preference: thinner bars for crispiness; thicker for fudgier texture.
  • Experiment with spices like cloves or nutmeg to enhance the Middle Eastern flavor profile.
