Perfect for holidays, dinner parties, or special meals, these potatoes are effortless to make, customizable with herbs and cheese, and can be prepared ahead to save time.

Ingredients

Scale

Potatoes and Dairy

  • 2 pounds russet potatoes, peeled and cut into chunks
  • 4 tablespoons unsalted butter
  • 1/2 cup heavy cream

Binding and Seasoning

  • 3 large egg yolks
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon freshly ground black pepper (adjust to taste)
  • 1/8 teaspoon ground nutmeg (a pinch)

Optional Add-ins

  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh herbs such as thyme, rosemary, or chives (optional)

Instructions

  1. Prepare the potatoes: Peel the russet potatoes and cut them into evenly sized chunks. Boil them in salted water for 15 to 20 minutes until fork-tender to ensure a smooth, creamy mash without lumps.
  2. Mash the potatoes: Drain the potatoes thoroughly to remove excess water, then mash them while still warm. Add butter, heavy cream, and a pinch of nutmeg, stirring gently until silky and well combined.
  3. Add egg yolks and season: Carefully stir in the egg yolks until fully blended. Season the mixture generously with salt and freshly ground black pepper.
  4. Shape the Duchess Potatoes: Transfer the potato mixture into a piping bag fitted with a large star nozzle. Pipe elegant swirls or small mounds onto a lined baking sheet, spacing them so they can brown evenly.
  5. Bake until golden: Preheat the oven to 400°F (200°C). Bake the piped potatoes for 18 to 22 minutes until the edges are golden brown and slightly crisp, and the inside remains creamy and soft.

Notes

  • Use starchy potatoes like russets for the best fluffy texture.
  • After boiling, let potatoes steam dry to avoid watery mash.
  • Use warm butter and cream to help ingredients integrate smoothly.
  • Practice steady pressure with the piping bag for attractive shapes.
  • Do not overcrowd the baking sheet; allow space for even crisping.
  • Watch the oven closely to avoid burning and achieve a golden crust.
