Ingredients

Scale

Primary Ingredients

  • 4 large fresh unwaxed oranges
  • 1 cup granulated sugar (for syrup)
  • 1 cup water

Optional Ingredients

  • Additional granulated sugar for coating
  • Cinnamon sticks or star anise (for spiced variation)
  • Dark or white chocolate (for dipping)
  • Maple syrup (for vegan glaze alternative)

Instructions

  1. Prepare the Peels: Thoroughly wash the oranges. Using a sharp knife or vegetable peeler, carefully remove the peel, avoiding as much of the white pith as possible. Cut the peels into uniform strips about ¼ inch wide to ensure even cooking.
  2. Blanch the Peels: Place the orange peels in a saucepan with cold water. Bring to a boil, then drain the water. Repeat this blanching process two more times to remove bitterness and soften the peels.
  3. Simmer in Sugar Syrup: Combine 1 cup sugar and 1 cup water in a saucepan and bring to a gentle boil. Add the blanched orange peels and reduce heat to a simmer. Let the peels cook until translucent and tender, about 45 to 60 minutes, stirring occasionally to prevent sticking or burning.
  4. Dry the Candied Peels: Using a slotted spoon, transfer the peels to a wire rack lined with parchment paper or a silicone mat. Space the peels out so they do not touch. Allow them to dry for several hours or overnight, which helps develop the chewy and slightly tacky texture.
  5. Optional Sugar Coating: For a crunchy exterior, toss the slightly tacky peels in granulated sugar once dried but still slightly sticky. Then allow them to dry again for about an hour before storing or serving.

Notes

  • Choose organic oranges to minimize pesticides and wax on peels.
  • Do not rush the blanching process; multiple boils ensure removal of bitterness.
  • Keep heat low during simmering to avoid burning or caramelizing the syrup too quickly.
  • Allow peels to dry thoroughly between steps for ideal chewy texture.
  • Store candied peels in airtight containers to maintain freshness and prevent sticking.
