Instructions

  1. Cook the Sago Pearls: Bring 4 cups of water to a rolling boil in a pot. Add ½ cup sago pearls and stir frequently to prevent sticking. Cook until the pearls become translucent with a tiny white dot in the center, about 10 to 15 minutes. Drain and rinse under cold water to stop cooking and remove excess starch.
  2. Prepare the Mango Puree: Peel and chop 2 ripe mangoes, keeping a few cubes aside for garnish. Blend the chopped mango into a smooth puree using a blender or food processor. This puree forms the fruity base and vibrant color of the dessert.
  3. Combine Ingredients: In a mixing bowl, mix the cooked sago, mango puree, 1 cup coconut milk, and 2 tablespoons sugar. Stir gently until well combined and the sugar has dissolved. Taste and adjust sweetness as needed.
  4. Chill and Serve: Refrigerate the dessert for at least 30 minutes to chill thoroughly. Serve in individual bowls, topped with the reserved mango cubes or other preferred garnishes like mint leaves or toasted coconut flakes.
