Instructions

  1. Prepare the Noodles: Cook lo mein noodles according to package instructions until al dente, then drain and toss with a little oil to prevent sticking. Set aside.
  2. Cook the Pork: Heat vegetable oil in a large pan or wok over medium-high heat. Add thinly sliced pork and cook for 4-5 minutes until browned and cooked through. Remove pork from pan and set aside.
  3. Scramble the Eggs: Lightly whisk eggs and pour into the same pan. Gently scramble until just cooked but still moist. Remove eggs from pan and combine with the pork.
  4. Stir-Fry the Vegetables: Add more vegetable oil if needed. Sauté minced garlic and ginger until fragrant. Add sliced carrots, bell peppers, and green onions, stir-frying until tender-crisp.
  5. Combine Everything: Return pork and eggs to the pan with vegetables. Add cooked noodles, soy sauce, oyster sauce, and drizzle sesame oil. Toss thoroughly to combine and heat through, allowing noodles to soak up the sauce.
  6. Final Touches: Toss one last time, taste, and adjust seasoning with additional soy sauce or a pinch of sugar if desired. Serve hot, garnished as preferred.
